Hope everyone enjoyed the holiday weekend!! We packed up and headed south to my parent’s house/cabin in Bend OR (Sunriver to be exact, :0) for those of you in the know) and yes, Jack even tagged along too! This past Saturday my brother and I teamed up to prepare a prime rib, here is how it went down.*** First, we chose a Divine Hereford Ranch Prime Rib (bone in even though the ad did not indicate so). We used about 10 different seasonings in our dry rub with absolutely no measuring, just what we felt it needed. I used a spoon for dispersing the rub, Mark spread it around and mashed it in evenly. I pre-heated the bbq and we placed the rib in. Friday was my birthday so Mark and Poppa had some special cigars for us to enjoy in the back yard. Ratatouille…the gift that keeps on giving! We still had a ton of veggies leftover from Sunday’s feast…mushrooms, zucchini, squash, shallots, etc…and a bit of ground beef and goat cheese from Mark’s filet mignon, SO when I was at the lower Queen Anne Safeway this evening, I was really trying to come up with a meal that could incorporate what I had at home. Salmon! Simply put there is no better way to entertain out of town clients at home then cooking them local Northwest food. To me the only real way to cook Salmon is to BBQ it. While this method is not always as easy to do, I went for it aka NAILED IT! Here is my most honest approach to how to BBQ the most perfect salmon. Rule #1 the Salmon has got to be WILD! I bought two line caught King Salmon from Jack’s Fish Spot (my local fishmonger) in Pike Place Market, he let me know they were caught off the coast of Neah Bay. Since picking up A Moveable Feast yesterday I quickly learned that Hemingway loved Paris and Oysters! So when Ash picked me up from work today she said, “what do you want to eat?” I responded, “lets go to Taylor Shellfish on Melrose.” As we drove up to Capital Hill it started snowing (again) and luckily Ashley got a parking spot right in front (if you don’t know Ashley…she always gets the best parking spots). We walked right into Taylor on Melrose and loved the half market/ half casual dining experience. Right away we saw the bins of oysters with circulating water, LARGE live dungeness crabs, live lobsters, fresh/live clams and a lot of other little things from the Sea.
