I enjoy Seattle in the winter time. Do not get me wrong our summers beat the rest of the world in terms of sheer awesomeness but none the less every restaurant, hotel, bar and shop in Pike Place is filled with tourists. During the winter months the market is overcast and the streets are virtually empty; Ash and I grab a bottle of wine from the upstairs market at DeLaurenti and head over to Jack’s Fish Spot from about 2pm till whenever Jack decides to close. Lately I have been loving Barolo in Seattle. I went late night a couple weeks ago with some people from our building and just fell in love with their Calamari Pasta…a light, cooked to perfection pasta dish. I have been back about 6x since. This was a rather quick and easy recipe! Was so surprised Mark liked it and I think it is a light alternative to a heavy alfredo… 2 chicken breasts, seasoned with a dash of olive oil/salt/pepper, baked at 425 degrees for 25 minutes and then cubed 4-5 cloves garlic, minced 1-2 cups mushrooms, sliced 3/4 sweet onion, diced 1-2 cups snow peas White wine 1 tbsp flour 1-2 cups half & half 1 packet spaghetti (you can use any pasta really…I will use penne or bowties next time) In a saucepan, sauté garlic, onions and mushrooms in a bit of olive oil until the onions are slightly translucent. So this is my last day of my makeshift juicing cleanse. Have a couple confessions…although I did supplement my breakfast and lunch with juice, I couldn’t sacrifice my dinner. The first day was miserable, second day got a bit better and by the third I was comfortable with just the juice for the greater portion of my day. BUT everyday around 3pm I would literally go crazy insane….tired, irritable, delusional, emotional- the whole bit. SO, I had to snack on raisins, walnuts, fresh veggies or a little peanut butter to curb my appetite. I constantly drank water or jasmine pearl tea (one of my favorites) and naturally cut out my daily Nespresso shot in the morning. We received a quick note from a Whole Foods representative regarding a one-day sale on wild- caught Marine Stewardship Council (MSC)- certified Sockeye Salmon this Friday, December 7th at $7.99/lb (almost a 50% savings) !! Whole Foods Sockeye Salmon are hand-selected by their port buyers at the peak of the season. It is certified sustainable by the MSC, meaning salmon populations are relatively abundant, fishing methods have minimal impact on the ecosystem and the fishery is managed effectively to maintain sustainability. Also, the MSC’s chain of custody certification means that the fish are fully traceable from fishery to Whole Foods. When Ash tried to make me hungry by just making salad…I jumped in with my own take with her main ingredient BROCCOLI. You see I am easy going, do not follow recipes and not afraid if I mess up a meal and if I do mess up, I will be the first to admit it 😎 So basically if you take what Ashley made here and add al dente spaghetti with fresh shaven Parmesan reggiano you have something awesome with truffled broccoli and full stomach. **NOTE I did quickly saute the broccoli with a pat of unsalted butter 🙂
