We are back and have a busy couple of weeks ahead…from our House Hunters episode tonight to the Lamb Pro Am finals on Wednesday. But since this is our first blog post in the past couple of weeks Ash and I decided to cover our recent trip to Ireland and Paris. I will cover Ireland. Hope everyone enjoyed the holiday weekend!! We packed up and headed south to my parent’s house/cabin in Bend OR (Sunriver to be exact, :0) for those of you in the know) and yes, Jack even tagged along too! I had a bunch of havarti cheese slices and salami from Trader Joes in Queen Anne and was feeling a little crafty :0) so I used a shot glass to cut the cheese into perfect circles. Easy way to impress your guests!

This was easy. Basically take a fat portabella/o mushroom cap and season with EVOO, salt, pepper and bake for 5 minutes at 375 degrees. Next add pizza sauce, in my case I used a gluten free pizza sauce from Whole Foods South Lake Union. I used the stem of the cap as pepperoni (see far left of picture). Then I added shredded mozzarella cheese and baked for another 5 minutes. Finally, I added lightly seasoned arugula with EVOO and crushed up pistachios. Dinner in 15 minutes max.

A classic with a twist! We were really wanting something quick, easy and lite tonight BUT I wasn’t really wanting to go to the store…luckily we had pretty much everything (except bread :0) – kind of key).
Dahlia Bakery is just across the street so I decided to pop over and pick up a loaf. Originally I wanted small baguettes…like what they use for their sammies…but they didn’t have any so I opted for the Olive Ciabatta loaf.
While they were slicing the bread, I started eyeing their spreads and thought that their Bleu Cheese/Feta would be the perfect flavor combo with the bacon and arugula.
YUM- prior to building my creation, I toasted the ciabatta and then at the last minute, Mark requested a soft boiled egg :0)
So we had a bunch of leftover brioche hotdog buns (from Macrina) and I just couldn’t see them go to waste so I decided to make Croutons for my fabulous Salmon dish last week and bread pudding for dessert :0) Mark is not a huge fan of croutons…in fact, he always eats around them BUT for the record, he did really like these. They are super easy and you can make them as salty, peppery, garlicky, spicy, cheesy, herby, etc as you would like. Preheat the oven to 350 degrees. In a bowl, combine your leftover, sliced (3/4″ to 1″ thick) brioche and about 2 to 3 tsp olive oil (really depends on how much brioche you have). Then season to your liking with…
