When my parents visited last, they brought a bunch of zucchini and squash from their garden and since then, they have been displayed proudly on our countertop with other handpicked fruits and veggies. It was time to enjoy them so I decided to make a Zucchini & Squash Bake with our favorites- cheese, basil, garlic and shallots :0)
What you need:
2 medium-sized zucchini, cut into half-moon slices
2 medium-sized squash, cut into half-moon slices
1/2 – 2/3 cup fresh basil, chopped
3 garlic cloves, minced
1 shallot, chopped finely
4-5 fresh thyme twigs, leaves only
1 cup mozzarella cheese, shredded
1 cup parmesan, grated and divided in two
Salt, to taste
Ground pepper, to taste
Preheat oven to 375 degrees.
Coat baking dish (8×8 will do) with a little olive oil and sprinkle a little salt on top.
Combine all ingredients in a large bowl with the exception of 1/2 cup Parmesan and mix well.
Pour the veggies in baking dish and bake for about 25 minutes, then remove from the oven and sprinkle the remaining Parmesan on top.
Bake for another 10-15 minutes, until the cheese is melted/browned and zucchini fully cooked. Serve immediately!
Marked LOVED the bake but was absolutely miserable because he really wanted a protein to go with it. I, on the other hand, eat like a bird so I was completely content BUT will say that grilled chicken breasts would have been the perfect combo!
