While we were in Bend this past weekend, my parent’s made reservations for us at one of the most talked about restaurants in Bend- Zydeco (http://www.zydecokitchen.com/).
They have a great menu and everyone was VERY happy with their dishes at the end of the night! Their BBQ Shrimp (w/southern grit cake) was delicious…and my sister had the Ahi Tuna with an awesome cucumber salad that I decided to duplicate last night (along with the shrimp).
The salad was a hit- light, refreshing, sweet yet savory- here is what you need:
3 medium to large cucumbers, sliced
1 red bell pepper, julienne cut & halved
1 pint cherry tomatoes, halved
1 shallot, finely chopped
1/2 cup fresh cilantro, chopped
1/2 lemon, juiced and added to taste
salt & pepper, to taste
rice wine vinegar, to taste
1 tbsp white sugar
Combine all ingredients and chill for 30 minutes prior to serving!
