This past weekend was action packed! Started with a beautiful dinner party on Friday evening, then late night preparations for our St. Patty’s brunch, the annual St. Patty’s Day Dash on Saturday early AM and finally the St. Patty’s brunch/extravaganza late AM throughout the day! Maggie and I started Friday night making just over 100 Green (lime) and Orange (peach) Jello Shots. I have always loved eggs in a frame and after seeing this twist on a classic I thought I would give it a try! It is so simple and delicious (if you like bell peppers, of course). And so on Sunday when I was walking around Pike Place I saw the bright red bell peppers at Franks Produce and bought em. Melt a little butter in a pan (medium/high heat). When completely melted and bubbling, add one bell pepper ring and let is sit for about a minute. Crack an egg in the middle of the bell pepper ring and add a bit of salt and pepper.
