I have always loved eggs in a frame and after seeing this twist on a classic I thought I would give it a try! It is so simple and delicious (if you like bell peppers, of course). And so on Sunday when I was walking around Pike Place I saw the bright red bell peppers at Franks Produce and bought em.
Melt a little butter in a pan (medium/high heat). When completely melted and bubbling, add one bell pepper ring and let is sit for about a minute. Crack an egg in the middle of the bell pepper ring and add a bit of salt and pepper. When the egg has turned white, then add shredded cheese (any cheese works- I used Monterey Jack and I imagine that Pepper Jack would be great). Reduce the heat to medium and cover the pan with lid. Cook until the cheese has almost melted completely and remove from heat…keeping the lid on. Give it about a minute (cheese should be melted) and plate it! I gave mine a little kick with Frank’s Red Hot Sauce (from Red Apple on 23rd & Jackson no relation to Frank’s Produce :0) but you can use any hot sauce you see fit.

I would have to say, rather than cooking, if you’re in Seattle and want some quick awesome eats, Dick’s and 13 Coins are tops on my list. Amazing. Dick’s have to have the best burgers, and 13 Coins is open 24 hours with breakfast served 24/7. Amazing spots!
