An quick and easy summer salad! 1 Iceberg Lettuce 2 Tomatoes 1 English Cucumber 1/2 a red onion A bit of Red Wine vinegar. Salt and Pepper to Taste Chop the lettuce small. Then the cucumber, tomatoes and onion. Squeeze 1/2 lime and 1/2 lemon…add Salt and Pepper and Sumac. DO NOT MIX UNTIL SERVING! Done!

I really only make rice pudding when I have leftover rice and tonight we had a ton! I just threw this easy dessert together in minutes using everything in my pantry…I didn’t use measurements- everything is to taste! Leftover rice (about 3 cups) 1 can of coconut milk White chocolate chunks (about 2/3 cup) Brown sugar (1-2 tbsp) White sugar (1-2 tbsp) Vanilla extract (1-2 tsp) Cinnamon, to taste Nutmeg, to taste Salt (just a small pinch) In a small saucepan combine all ingredients and cook on medium heat until it thickens. Remove from the heat, top with crushed walnuts/almonds and serve!
A couple months back our good friend Lori Ness asked if Ashley and I would be interested in ringing the opening bell at Pike Place Market. Yes! We were in! But what bell ringing was there in Pike Place? Lori explained to us that Pike Place has had a tradition of bringing in different community leaders, taste-makers… from around the community to ring the opening a bell. Saturday morning at 8:30am (the earliest we have ever been to Pike Place) Ash and I headed over to the market. Upon arriving we were greeted by Pam Corwin and Sharon (the Market mom).
