I really only make rice pudding when I have leftover rice and tonight we had a ton! I just threw this easy dessert together in minutes using everything in my pantry…I didn’t use measurements- everything is to taste!
- Leftover rice (about 3 cups)
- 1 can of coconut milk
- White chocolate chunks (about 2/3 cup)
- Brown sugar (1-2 tbsp)
- White sugar (1-2 tbsp)
- Vanilla extract (1-2 tsp)
- Cinnamon, to taste
- Nutmeg, to taste
- Salt (just a small pinch)
In a small saucepan combine all ingredients and cook on medium heat until it thickens. Remove from the heat, top with crushed walnuts/almonds and serve!
