I really only make rice pudding when I have leftover rice and tonight we had a ton!  I just threw this easy dessert together in minutes using everything in my pantry…I didn’t use measurements- everything is to taste!

  •     Leftover rice (about 3 cups)
  •     1 can of coconut milk
  •     White chocolate chunks (about 2/3 cup)
  •     Brown sugar (1-2 tbsp)
  •     White sugar (1-2 tbsp)
  •     Vanilla extract (1-2 tsp)
  •     Cinnamon, to taste
  •     Nutmeg, to taste
  •     Salt (just a small pinch)

In a small saucepan combine all ingredients and cook on medium heat until it thickens.  Remove from the heat, top with crushed walnuts/almonds and serve!
