Spicy Chicken, Cilantro and Avocado Salad with Lime Dressing!

That time of year again- avocados galore!! The lower Queen Anne QFC is selling them 10 for $10 right now…toooo good to pass up. This is a super healthy and filling salad that was surprisingly better the next day for lunch :0) … will definitely make it again!
What you need:
2 baked chicken breasts, shredded
* Before baking, season with a sprinkling of:
garlic powder, onion powder, kosher salt, pepper, cayenne pepper, cumin & smoked paprika
4-5 avocados, diced
2/3 cup fresh cilantro, finely chopped
4 green onions, thinly sliced
1-2 limes, juiced
2-3 tbsp mayonnaise
Salt and pepper, to taste
1 tomato, thinly sliced for garnish OR if you want to mix cherry tomatoes- go for it!

In a small bowl, mix the mayonnaise with 1 tbsp lime juice and a pinch of salt- add more lime juice as desired…you want the lime to be more prominent than the mayo.
In a large bowl, mix the chicken, onions and lime/mayo dressing. Then add the avocados and cilantro- don’t mix the avocados too much as they will start to mush! Give it a taste test and add salt and pepper if needed.
Serve immediately with your tomatoes or chill! I added a bit more lime juice before putting the leftovers in the fridge to prevent the avocados from browning. YUM!
