Whole Foods SLU has $2.99 per lb asparagus right now so I couldn’t resist!  I actually picked it up a few days ago with no plan in mind and then it came to me- an Asparagus Gruyere Tart.  Couldn’t stop there so I added a couple of my favorite things- prosciutto and soft boiled eggs…. What you need: 1 frozen puff pastry 2-3 cups of Gruyere cheese, shredded 1 bundle of asparagus (medium stalks) Olive oil Salt & pepper 1/4 lb prosciutto 2 soft boiled eggs Preheat oven to 400 degrees.
