Last weekend I made a steak and basically nuked it. I know what I did wrong. I will keep this short…heat the skillet till it is whisping smoke. Cook 4 minutes per side. Melt a compound butter over the top. Let rest for a couple minutes. Crumple up fresh goat cheese. I quickly tossed a couple brussel sprouts in a truffle oil (then I made this martini 🙂 Cool thing…steaks were delivered via Postmates from Whole Foods South Lake Union 🙂
