Last week I got sick…I was over it in two days. Between checking email and working from the couch I watched A LOT of YouTube…especially ‘Munchies,’ by Vice.
After watching a couple of the Action Bronson episodes I decided to make something quick with Zucchini.
Below was a simple appetizer I made for myself.
All you do…is slice a Zucchini 1/4 inch…salt, pepper, your favorite finely grated cheese…I used Beechers Flagship and fine breadcrumbs, a little olive oil and done.
Simply set oven to broil…move the rack to the top and cook for 5 minutes. Easy! I would probably do this with other vegetables including Artichoke hearts!
